A very aromatic rosé, with notes of red fruit, blackcurrant, raspberry, and vineyard peach... Palate: full and rounded, lively and tannic, between aromas of blackcurrant and citrus fruits. A lovely match for a platter of goat cheeses. A serious rosé which will only improve in the cellar.

100% Pinot Noir, made from old vines farmed organically (though not certified) and planted on a legendary parcel of limestone and marl. Only 0.1 hectares of the estate is planted with Pinot Noir. The harvesting of this parcel takes place after Les Monts Damnés, and the bunches are picked perfectly ripe. Vinification: direct pressing, fermentation with indigenous yeasts and maturation in old demi-muid barrels. Pascal prefers to intervene as little as possible during the winemaking process, so no fining, and no filtration.
Pascal Cotat
Pascal Cotat is the major reference in the appellation, he works his vines on the steep slopes of Chavignol, 2.3 hectares which came to him after the family estate was split between he and his cousin (François).
