A Sauvignon cuvée from a 1-ha parcel grown biodynamically (certified by Demetrer), planted on a white chalky soil, located in the commune of Verdigny. The vines are 40 years old and the yields quite low, around 20 hl/ha. As for the vinification: 3 months of fermentation in old barrels, including malolactic fermentation, all with natural yeasts. Matured 36 months in old barrels on its fine lees, and bottled without filtration. No sulphur is added – during vinification, maturation, or at bottling.
