Saulétas - 2017 - Sébastien Riffault
Domaine Sébastien Riffault
A one-of-a-kind Sancerre with a captivating nose, boasting surprising and complex aromas of almonds, apricots, and salted butter caramel, as well as floral and vegetal notes... The palate matches the nose, bewildering yet highly seductive, with a peppery, saline finish.

A Sauvignon cuvée from a 1-ha parcel grown biodynamically (certified by Demetrer), planted on a white chalky soil, located in the commune of Verdigny. The vines are 40 years old and the yields quite low, around 20 hl/ha. As for the vinification: 3 months of fermentation in old barrels, including malolactic fermentation, all with natural yeasts. Matured 36 months in old barrels on its fine lees, and bottled without filtration. No sulphur is added – during vinification, maturation, or at bottling.
Sébastien Riffault, look no further, it’s him, the 100% natural winemaker in Sancerre. His estate, Domaine Etienne et Sébastien Riffault, is located in Sury-en-Vaux. There Sébastien works his soils with horses, uses zero chemicals in the vines, and farms biodynamically. If is approach recalls that of Alexandre Bain, it’s perhaps not surprising to know the two are not only neighbours but close...All wines
