2/3 Gamay from the Beaujolais-Villages parcels and 1/3 from Chiroubles, conducted organically. Manual harvest, the full bunches are crushed in small trays and then put in qvevris, these Georgian amphorae made of clay and buried in the soil. Two qvevris are in a small cabin in the vines, and two are in the middle of the parcel. Maceration for 10 months, racking and pressing in June 2021, 6 more months of aging in barrels. Bottled in March 2022, zero sulfites added.
