100% Chardonnay from old vines farmed as cleanly as possible (non-certified organic), planted in 1964 on a 1.25 ha parcel with light, shallow soils (10 to 30 cm), clay-limestone, with hard limestone stones. South-east exposure. Hand-harvested in small boxes. Vinification: long direct pressing, light settling, barrel fermentation and long ageing in 600-liter demi-muids with little new oak. Six months of ageing in tank before bottling, sensible use of sulphur.
