Very old vines from a 0.5 ha parcel located in Saint-Bris-le-Vineux and managed biodynamically. A cuvée that is not produced every year, low yield around 20hl/ha. Late manual harvest, long fermentation in barrels and on fine lees, without batonnage. Maturation for one year, half in new casks and the rest in 7 to 8 year old barrels. Not fined, nor filtered, just a micro-dose of sulphur at bottling. With the De Moor, the intentions are good and the result extraordinary.
