100% Chardonnay from a parcel in the commune of Uchizy, in the Côte Maconnaise. The vines are farmed biodynamically, planted on a clayey-limestone soil over gravel, facing the rising sun. Vinification: direct pressing, juice cold settled for 24 hours. Fermentations in oak barrels that have seen several wines in order to preserve purity and minerality. The resulting wine is matured on its lees for 11 months before bottling.

Emmanuel Giboulot, you’ve probably heard of him by now. He’s the winemaker who became famous for refusing to treat his vines with pesticides, and as a result was convicted and fined in court. The estate was inherited from his father who had already converted to organic viticulture in the 1970s. Besides his 10 hectares of vines, the vigneron continues to farm 80 hectares of grain.
