Chardonnay from vines located on Montagne de Beaune, above the AOC Beaune 1er cru “Les Bressandes”, at the bottom of a little valley where it’s very hot in the summer. The vines are 30 years old on clay-limestone soil. The Giboulot estate converted to biodynamics in 1985, making it a pioneer of the method in Burgundy. Vinification: direct pressing, settling of the must.The clear must is fermented in oak barrels which have seen several wines to preserve purity and minerality. Matured in barrels on lees 12 months.

Emmanuel Giboulot
Emmanuel Giboulot, you’ve probably heard of him by now. He’s the winemaker who became famous for refusing to treat his vines with pesticides, and as a result was convicted and fined in court.
