Gamay grown on a terroir with a slab of pearly limestone with crystals, veins of black manganese, and almost no soil between 5 and 50 cm. From vines planted in 1953, and grown biodynamically, the whole estate is certified since 2001. Low yields, around 28 hl/ha. Grapes are harvested by hand, with sorting in the vineyard and on tables when necessary. Vinification: semi-carbonic with whole bunches, maceration for one month, matured in barrels that have seen several wines for 12 months, and then 3 months in vats. Bottled without filtration or added sulfites.

Julien Guillot is a face of youth and renewal for the Mâconnais. He started working in 1998 on his family’s estate, spearheading its conversion to biodynamics, and finally taking over the reigns in 2001.
