100% Pinot Noir from biodynamically-grown vines planted on a plot in the Climat Les Clos Roussots. The soil is ploughed, chemicals are obviously banned, and the grapes are harvested by hand in small crates. Vinification: part of the harvest is de-stemmed and placed in the bottom of the vat, not much extraction, a few pump-overs, just a few punching down, long aging on the lees in barrels that have seen several wines. Not fined or filtered, just a micro-dose of sulfur at bottling in order to protect the wine.
