Pinot Noir from 50-year-old vines grown on clayey-limestone soils, with a layer of pebbles and clay over a limestone bedrock. The vineyards are sloping and south-facing, located within a warm and sunny microclimate. The grapes come from several climats: Vauxmuriens, Vignots, Chanière and Chanlins. Fruit of healthy organic farming, with a yield of 33 hl/ha. Vinification: whole grapes bunches, meticulously sorted, fermented without SO2, with cap punch downs twice a day for 4 weeks. Matured on lees in barrels under “reductive” conditions, without racking, and with stirring, for 16 months. Only a micro-dose of sulphur at bottling.
