A deep, complex nose with notes of small black berries, amarena cherry, and an elegant touch of wood. The palate is a pure, sapid expression of Pinot Noir, coupled with great length and all the elegance and delicacy of Volnay.

100% Pinot Noir, from vines planted in 1951 on a 0.3 ha-plot of brown clay, marl and soft limestone, all in the heart of Volnay’s Premiers Cru vineyards. Grapes harvested by hand at maturity. Vinification: 10% whole bunches undergo 4 days of pre-fermentation cold maceration, then 26 days in vats with pumping over and cap punch downs, followed by gentle pressing, and 18 months of maturation in barrels, with 30% new oak. The barrels are blended in vats and matured another three months. Bottled without fining or filtration, and a microdose of sulphur.

Maxime Dubuet-Boillot
Maxime Dubuet-Boillot, child of the 1989 vintage and grandson of a farmer from Corberon and a vigneron from Volnay, first turned his back on his family vineyards before finally returning to them for good. Maxime’s career began not in wine but auto racing, working as a mechanic for The 24 Hours of Le Mans. He pursued that passion for 10 years before heeding the call of his winegrowing roots....
