A primeur version for this cuvée in 2023: 100% Melon de Bourgogne from five-year-old vines grown organically, planted on North-facing slopes in the small town of La Varenne. Produced from grapes bought at Romain Moreau's Fief de Bel Air estate. Harvested by hand. Vinification: direct pressing, fermentation and two months of aging in vats, light earth filtration three days before bottling on the 26th of October, 2023. No fining, just a micro-dose of sulfur (1gr/hl).
