This very expressive “Sancerre” comes between quotation marks because the aromatic palette is so baffling and mineralesque. It’s also extremely fruity: guava, pineapple, and pear… The palate has great length and minerality, with a saline finish. Yet another highly surprising bottling.

A Sauvignon cuvée from a 1-ha parcel planted on a flinty soil, grown biodynamically (certified organic and biodynamic by DEMETER), located in the commune of Saint-Satur. The vines are 50 years old and the yields quite low, around 20 hl/ha. As for the vinification: 3 months of fermentation in old barrels, including malolactic fermentation, all with indigenous yeasts. Matured 36 months in old barrels on its fine lees, and bottled without filtration. No sulphur is added – neither during vinification, maturation, nor at bottling.
