45% Syrah, 30% Grenache Noir, 20% Cinsault and 5% Viognier from 35-year-old vines farmed organically and biodynamically, planted on Cretaceous marl-limestone soils in the heart of the garrigue, parcels between 117 and 135 meters of altitude. Manual harvest, total destemming, indigenous yeasts. 40 days of maceration, 80% in tronconic vats and 20% in open demi-muids, with daily cap management. 18 months of ageing in 228-liter barrels from one to five wines, and 20% in 750-liter amphorae. Unfined, unfiltered, 20 mg/l total SO2.

Florence et Benoît Chazallon
Florence and Benoît Chazallon, partners in life and in the vines, run Château de la Selve, a 13th-century estate in Grospierres, Ardèche. Benoît was almost destined to become a winemaker, coming from the great Rhône Valley family of growers, the Delas. He spent much of his teenage years among the vines and cellars of the Rhône. Florence is an oenologist, and together they took over this family...
