Syrah cultivated biodynamically, in a cool growing area, on a soil of highly decomposed granite soil known as "Gore" and loamy-clay. The parcel is situated in the "Sommet des Arlettes" vineyard site, facing east and north. The vines are 60 years old on average. Vinification: indigenous yeasts, 100% destemming, light punching down of the cap, fermentation in a 16-hl cement egg. Maturation: 18 months in a 600-litre cement egg. Vacuum sealed at bottling, without filtering or fining, and 1 g/hl of sulphur.
