100% Sérine from young vines farmed organically and biodynamically (certified), planted in 2019 on a 0.5 ha parcel with clay-siliceous soils and mica-schist. Hand-harvested, yields at 35 hl/ha. Natural vinification in the cellars of Maison Stéphan: the harvest is placed in a cold room before whole-cluster vatting for a cold semi-carbonic maceration, with a few pump-overs, gentle pressing, 12 months of ageing in French oak barrels with no new wood. Unfined, unfiltered, no added sulphites.
