WOW, a beautifully crafted Savagnin, mineral, carried by notes of white fruits, candied lemon, hazelnut. The palate offers us an alluring fat without any heaviness, beautiful mineral freshness and fine acidity. And to top it off, a crazy length!
A cuvée made of purchased grapes, 100% Savagnin from vines around twenty years old, grown in sustainable agriculture and planted on a plot facing due North in Arbois, 350 meters above sea level, on gray and blue marls. Manual harvesting, vinification at Damien Courbet's cellar, direct pressing, fermentation and aging mainly in concrete eggs, and just a few barrels that have seen several wines. 18 months of ageing, bottled in April 2022.
David Croix is at the head of the Domaine des Croix, located in the heart of Beaune. Originally from Montlouis-sur-Loire, the young guy knew from the age of 16 that he wanted to make wine, and therefore started a journey to become an oenologist.
