A cuvée in homage to Frank Zappa, and his hyper-energetic song, just like this wine! Highly complex, with notes of peach, flowers and almonds, a hyper-aromatic "tinted white", off the beaten track, with very fine aromatic persistence.
100% Chardonnay from 40-year-old organic vines planted on the clay-limestone terroir of Les Trouillots. Harvested by hand. Natural winemaking: direct pressing, fermentation and aging in 228-liter barrels for one year, without new oak. After the 2021 harvest, Valentin macerates his hybrid grape skins (after they had been pressed) in the wine for two weeks, followed by one more year year of aging in vats. Bottled at the estate in September 2022 with no filtration or fining, and no added sulfur.
