100% Ploussard from 45 to 80 years old vines from massal selection, conducted organically and planted on pink iridescent marls on the locality of “Les Chambines”. Manual harvesting done on September 10th, 11th and 12th, complete destemming, fermentation, and maceration in 2400 litres casks. Treading and pumping over once a day for 3 weeks, maceration for a month, pressing and élevage in the same container until August 2019. Bottled at the Estate, unfined, unfiltered, zero added sulfites.
Tony Bornard is the son of the famous Jura figurehead Philippe Bornard, today retired. They are neighbours of the famous Pierre Overnoy, andhey reside in the oldest building in the village of Pupillin. Tony struck out on his own to quietly create his estate as well in 2013. He then took over the family estate from his father in 2017, merging it together with the estate he’d personally founded...All wines
