100% Ploussard from three plots: 35-year-old vines grown on red marl and gravel, 45-year-old vines on a mille-feuille of black marls, and 80-year-old vines on green striped marls. The grapes are farmed organically and biodynamically, followed by a gentle vinification, including two months of maceration with some pumping over. Matured in stainless steel tanks, and bottled in November 2019. Neither fined nor filtered, and zero added sulphites.
Tony Bornard is the son of the famous Jura figurehead Philippe Bornard, today retired. They are neighbours of the famous Pierre Overnoy, andhey reside in the oldest building in the village of Pupillin. Tony struck out on his own to quietly create his estate as well in 2013. He then took over the family estate from his father in 2017, merging it together with the estate he’d personally founded...All wines
