100% Chardonnay from 40-year-old vines farmed organically and planted on clay and limey soils in the Arbois appellation. Harvested by hand, of course, follow by direct pressing in whole clusters, transfer into barrels, and fermentation and maturation in 28-hl cask and 500-liter barrels that have seen several wines. Neither fined nor filtered, with a micro-dose of sulphur at bottling.
Jean-Baptiste Ménigoz of Domaine des Bottes Rouges didn’t begin his career as a vigneron but rather as a schoolteacher.
