Les Vignes de mon père is Ganevat’s top cuvée of Savagnin ouillé. 100% Savagnin Vert from a micro-selection taken from the Marnes Bleues soils terroir, which undergoes a “slightly” prolonged maturation in barrels lasting… 10 years! Vinification is natural, the cuvée is ouillée or topped up to prevent the veil of flor typical of “oxidative” wines, which here means that as the barrels are aged in humid cellars, wine is constantly added to keep them full despite the slow process of evaporation. Unfined, unfiltered, without added sulphur.
