An exceptionally complex and indulgent Vin Jaune—you just want to dive in. Hazelnut, candied fruit, toffee, preserved lemon, a hint of coffee... Insanely long and layered on the palate, with an endless finish. A Vin Jaune made for contemplation.
First vintage for this Vin Jaune, 100% Savagnin, certified orgnic and biodynamic by ECOCERT and DEMETER. From vines planted on steep, south-facing Liassic mica-rich soils, with some terraced sections at a high density of 27,000 vines/ha. Late-harvested, then aged in Burgundy barrels for at least 6 years and 3 months, with zero topping up. A veil of yeast forms on the surface, feeding on the wine as a third of the volume slowly evaporates. Only after this long wait can "la percée" finally take place.
Stéphane Tissot took over the beautiful family estate from André and Mireille Tissot in 1990, and in over thirty years has accomplished a colossal task to reach the summit of the Jura and become a model far beyond the borders of France.
