A 100% Sauvignon cuvée from vines farmed biodynamically and planted on clay-limestone soils in the commune of Pouillé. The grapes are picked by hand, of course, then a part of the harvest is directly pressed and the remaining part go through a three weeks maceration in whole clusters. Gentle pressing, and five months of maturation. Bottled without fining or filtration, and zero added sulphur.

Paul Gillet was born into a family of Alsatian winegrowers. In 1998, he’d make his debut in the wine world as a wine merchant. In 2002, his discovery of natural wines, especially those of Bruno Schueller , would leave a lasting impression, eventually changing his destiny. He opened a brasserie in Buenos Aires in 2007. There, Paul would promote Argentinean vignerons who shared his affection...
