100% Sauvignon from a parcel of 40-year-old vines, grown organically and planted on flinty clay soils. Manual harvest and natural vinification: direct pressing, gentle settling, indigenous yeasts, transfer to barrels mid-fermentation, maturation on lees in 400-litre barrels and conical vats that have seen several wines. Just a micro-dose of sulphur at bottling.
