Pinot Noir from vines planted in 1953 on a 70-acre parcel with south/southeast exposure, at an altitude of 350 meters, on predominantly limestone soils, with scattered rock outcroppings. The grapes are harvested by hand and sorted in the cellar, with only the best fruit used to produce the Sur-Roches cuvée. Vinification: whole grape bunches are fermented 14 days in vats; with foot treading and daily pumping-over. Gentle pressing, 12 months of aging in barrels, 30% of which are new.
Maxime Dubuet-Boillot
Maxime Dubuet-Boillot, child of the 1989 vintage and grandson of a farmer from Corberon and a vigneron from Volnay, first turned his back on his family vineyards before finally returning to them for good. Maxime’s career began not in wine but auto racing, working as a mechanic for The 24 Hours of Le Mans. He pursued that passion for 10 years before heeding the call of his winegrowing roots....
