This Champagne is a blend of Chardonnay and Pinot Noir, from all the estate's plots: La Fosse, Martin Fontaine and Les Cognaux, grown organically and biodynamically. Manual harvesting and vinification like a solera, in a perpetual cask with all of the couple's harvests, from the 2011 vintage; so nine vintages in one! Bottled without fining or filtration, just a micro-dose of sulfur during the first vintages, aging on laths, disgorged in October 2021.
