A Trousseau cuvée from vines farmed organically and planted on the Arbois appellation, limestone scree on Trias clays. The grapes are harvested by hand when fully ripe, total destemming by hand, followed by 6 weeks of maceration in stainless steel vats, gentle pressing to preserve the fruit flavours, maturation: 50% in 600-litre demi-muid barrels and 50% in stainless steel vats. Unfined, unfiltered, bottled in Spring 2020 with a micro-dose of sulphur.
