A 100% Sauvignon cuvée made from vines cultivated organically and planted on several parcels of clayey-sandy and flinty soil, this cuvée was made thanks to grapes bought to other organic winemakers. The harvest is done by hand, and the grapes sorted in the vineyard. Vinification: direct pressing, indigenous yeasts, fermentation and aging on fine lees in fiber vats and stainless-steel vats, for four months. Bottled at the Estate in January 2023 without fining or filtration, just a micro-dose of sulphur.
