Peirardié - 2021 - Thomas Ayoun
Domaine de la Combe au Mas
Peirardié is a Provençal nickname given to the inhabitants of the commune of Mormoiron, which loosely translates as "pebblers". This is some generous, rich juice, balanced by a lovely acidity which gives it a delicious crisp sensation and a taste that keeps bringing you back.

Blend: 1/3 70-year-old Grenache, 1/3 Syrah and 1/3 Carignan, from vines farmed organically and planted on clay-limestone and pebble soils at the foot of Mont Ventoux, at 350 metres, on the south side. The grapes are picked by hand at maturity. Vinification: total destemming and co-fermentation of the three grape varieties, one month of maceration, and slow extraction by infusion, followed by four months of maturation in large, century-old, 2000- to 4000-litre terracotta amphorae, with just a microdose of sulphur at bottling.
