100% Ugni Blanc from 30-year-old vines, grown organically and planted on loamy and clay soils. Manual harvesting and small yields. Vinification: direct pressing, bottled at the end of September 2023 with residual sugars to create the effervescence in the bottle, aging on laths for 6 months, disgorged in March 2024. Not fined, not filtered, just a micro-dose of sulphur.
