100% Chardonnay from a parcel in the Saint-Romain appellation, in the “Sous le Château” sector. This is a monopole vineyard planted in 2000 by Fred on a steep slope of stony white soils, facing East. Manual harvest. Vinification is entirely natural: direct pressing, fermentation and maturation in egg-shaped cement vats for 14 months. Bottled without fining or filtration, zero added sulfites.

Aurélien Verdet is a Burgundian vigneron based in Arcenant, in the Hautes-Côtes de Nuits, where he had already been developing his own estate before taking over Domaine de Chassorney, founded in 1996 by his longtime friend Frédéric Cossard.
