Chardonnay from vines planted in 2000 on a tiny plot within the “Derrière chez Edouard” climat, planted at a very high density of around 30,000 vines/ha — as had been done from the Middle Ages until phylloxera in the 19th century. White marl soils on the upper slopes. South-east exposure. Hand-harvested. Vinification: long direct pressing, light settling, then transferred into casks for fermentation and long ageing in 600-liter demi-muids with little new oak. Six months of ageing in tank before bottling, sensible use of sulphur.
