Savagnin Sous Voile - 2022 - Domaine André et Mireille Tissot - Jéroboam
Stéphane Tissot

100% Savagnin from old vines farmed biodynamically and planted between 1973 and 2000 on Triassic clay soils. Ploughed soils, parcels facing East / South-East. Hand-harvested. Vinification: destemming, pneumatic pressing, fermentations and 33 months of ageing in barrels that have seen several wines, without topping up, under a veil of yeast (or in french a voile de levures). Bottled at the Domaine in October 2025 without filtration or fining, just a micro dose of sulphur added.
