A very beautiful bottle of bubbles, opening with aromas of cranberry, lychee, and bitter almond... Palate: complex, beautiful body, a sparkling pet-nat that is almost vinous. We recognize the hand of Marie Thibault at work! An ideal pairing for a first course or for accompanying a light meal of tapas.
A natural sparkling “pet-nat” rosé, made from Gamay grown by Marie as well as certified organic grapes from Azay-le-Rideau. The grapes are blended and pressed together, with direct pressing, and fermentations launched in stainless steel, steel and cement vats. Bottled in November 2021, one year of aging on laths, all without sulphur!
Marie Thibault has almost always known, while not having any family ties with wine, if not for the pleasure of hosting friends around a good bottle, that she would like to be a winemaker in the Loire Valley "when she’d be a grown up”...
