100% Melon de Bourgogne from 30-year-old vines grown organically, planted on 10 ares of silty soils over schist subsoil, in the small town of Maisdon-sur-Sèvre. Harvested by hand, in small crates. Natural vinification: total de-stemming, maceration of the berries for 10 days, gentle pressing in a vertical press, 8 months of ageing on lees, in vats. Bottled in Spring 2023, with no fining or filtration, and no added sulfur.

Victor Cossy, child of the 1981 vintage, is the man behind Fermenterre, a small 3.22-hectare vineyard in Maisdon-sur-Sèvre, Muscadet.
