Michèle’s son, Maxime-François Laurent, has set up a small structure to buy grapes from local vignerons who farm their vines organically. Blend: 70% Grenache, 20% Syrah and 10% Cinsault, from young 15- to 30-year old vines planted in the communes of Montbrison sur Lez and Valréas. Clay and limestone soils. The grapes are harvested by hand. Vinification: the grapes are partially destemmed, followed by 15 days of maceration in concrete vats, gentle pressing, and six months of maturation in vats. Neither fined nor filtered, and zero added sulphur.
