100% Chenin from organically-grown vines planted on schistose-carboniferous soils in the Saint-Aubin-de-Luigné area. Harvesting is done by hand. Vinification: 2/3 of direct pressing and 1/3 of whole bunches that macerate for a year in this Chenin juice, in amphorae. At the end of this long maceration, Jean-Christophe does a racking and retains only the juice; the whole bunches are not included in this cuvée. Bottled in August 2022 without fining or filtration, without added sulfites.
