A Sauvignon cuvée from a 1-ha parcel planted on a clay-limestone soil, located in the commune of Verdigny. The vines are 50 years old, grown biodynamically (the estate is certified organic and biodynamic by DEMETER), and the yields quite low, around 20 hl/ha. As for the vinification: 3 months of fermentation in old barrels, including malolactic fermentation, all with natural yeasts. Matured 36 months in old barrels on its fine lees, and bottled without filtration. No sulphur is added – during vinification, maturation, or at bottling.

There Sébastien works his soils with horses, uses zero chemicals in the vines, and farms biodynamically.
