This Sauvignon cuvée is made from 15-year-old vines farmed biodynamically and planted on a parcel of just 85-ares of flinty clay soil, surrounded by forest. Harvested by hand, of course. In the winery: direct pressing, fermentation and maturation for one year in vats. Neither fined nor filtered, with just a micro-dose of sulphur to protect the wine during racking and at bottling.

Noëlla Morantin
Noëlla Morantin decided to plunge into a new career at the age of 28. Dropping everything, she enrolled in a viticulture and oenology programme, which soon led to a series of internships with such quality names as Agnès and René Mosse in Anjou, and Philippe Pacalet in Burgundy… Her growing CV would impress Junko Araï, a Japanese importer who also owned vines in France happened to be looking...
