100% Pinot Noir, made from several parcels grown in red clay in the communes of Saint Père and Vézelay in the Yonne department; 30-year-old vines, certified organic. Manual harvesting, grapes sorted on the vine. Vinification: whole bunches, with no unnecessary interventions save punching down the cap a few times, no additives, no commercials yeasts, blending of free run and press juices. Maturation in barrels for 10 months, no fining, no filtering, with a pinch of sulfites at bottling.
Valentin Montanet and his parents Jean and Catherine are vignerons without any pretention... but who should be taken very seriously.
