100% Pinot Noir, from young vines planted by Maxime in 2016 on his grandfather's farm, on a one-ha parcel, in the commune of Corberon, about thirty kilometres east of Beaune. With trellises nearly 2m high, the vines are planted on deep, rich clay-silt soils. Vinification: 100% destemmed grapes are fermented in vats for 12 days, then 90% is matured in enamelled tanks and 10% in new oak barrels. 6 months of aging, the wine is blended and matured an additional one and a half months in vats. Bottled with light filtration, and a pinch of sulphur.
Maxime Dubuet-Boillot
Maxime Dubuet-Boillot, child of the 1989 vintage and grandson of a farmer from Corberon and a vigneron from Volnay, first turned his back on his family vineyards before finally returning to them for good. Maxime’s career began not in wine but auto racing, working as a mechanic for The 24 Hours of Le Mans. He pursued that passion for 10 years before heeding the call of his winegrowing roots....
