Chardonnay from vines around 40 years old, grown at the En Daisey and Bully vineyard sites, facing south. Vinification: whole grape bunches pressed slowly, with natural settling by gravity, and alcoholic and malolactic fermentations in barrels. Matured on lees for 14 months. Bottled with a light dose of sulphites. Open 1-2 hours before serving, and may be decanted to remove gas, if desired.
