100% Pinot Noir from biodynamic vines planted in 2007 on the heights of Premeaux-Prissey, on a 1 ha parcel facing south-east at 400m altitude. Shallow, stony soils of sand, clay and silt. Hand-harvested between September the 6th and the 12th of 2023. Vinification: full destemming, 5 days of cold pre-fermentation maceration, 16 days in stainless steal tanks with indigenous yeasts, with daily pumping over. Gentle pressing, 11 months of aging in barrels, 20% new oak, then 1 month and a half of blending in vats. Bottling on the 9th of September 2024.
