A négociant cuvée of 50% Chardonnay and 50% Aligoté, from vines grown organically and planted in the Mancey vineyards in Southern Burgundy’s Mâconnais region. Harvested by hand using small crates. Vinification: direct pressing, settling of the must, racking into barrels, fermentation with indigenous yeasts and maturation for 12 months in barrels. Bottled on the 2nd of September without filtration or fining, and ZERO added sulphur.
