Notes of apple and pear, preserved lemon and a mineral backbone. This powerful minerality is echoed on the palate, a wine-like, taut Champagne with a straight profile, beautiful verticality and fine bubbles. Saline finish.
A blend of 60% Pinot Noir and 40% Chardonnay, from vines averaging 36 years old, grown organically on clay-limestone soils in Mailly-Champagne, a Grand Cru village on the Montagne de Reims. Harvested by hand. Vinification: gentle pressing, spontaneous fermentation in small oak barrels and demi-muids that have seen several wines. Aged for nearly two years on laths, this is a zero dosage brut champagne, disgorged on the 3rd of October, 2022.
