Chardonnay from vines planted on a micro-parcel within the Les Tremblots climat, at very high density of around 30,000 vines/ha — as was the practice from the Middle Ages until phylloxera. Soils of white marls on the upper slopes, with soft limestone. Hand-harvested. Vinification: direct and long pressing, light settling, the juice is transferred into 600-liter demi-muids for fermentation and long ageing with little new oak. Six months of ageing in tank before bottling, sensible use of sulphur.
